Quick Cooking Chicken Afritada for the Family

Chicken Afritada
A father's quick fix to make dinner for the family with a chicken recipe.

I'm at the computer busy surfing the net when I realize that it's already 6:00 in the evening. Since I'm the one who do most of the cooking in the family I have to create something, fast.

Luckily, I had my chicken quarters taken out of the freezer awhile ago. My advice is that you buy the chicken at the supermarket they come way cheaper than the ones you have at the public market. Next to the whole chicken, which has a price tag of around a hundred to P118 per kilo, I would go for the chicken quarters.

Cutting them in half, I have 4 quarters, I gave it a quick rinse. Chop some garlic and 1 onion. Peel and chop 2 medium sized potatoes into 1 inch cubes.

Heat the frying pan, use about one cup of oil. Fry first the potatoes using medium heat, I usually fry them it's a big hit with the kids, when the potatoes are light brown in color already take them out and set them aside, just be sure to place them out of sight from the kids otherwise you will have no more potatoes to use latter.

In the same frying pan, remove most of the oil just leave enough for sauteing. Saute the garlic first, when it's light brown already, add the onion. Next you put the chicken, mix then add some fish sauce, cover then let it simmer for three minutes. Add tomato sauce and about 1 and a half cup of water. Cover and let it cook while occasionally stirring. Do taste and adjust the flavor accordingly.

Put the chicken afritada in a bowl, then add the fried potatoes on top before serving.

After I'm done I yell, "kakain na!"(eating time), and see the whole family rushing to the dinner table.

"Oh", before I forgot, make sure you put the rice in the cooker before preparing the meal, that way it will cook almost the same time as the chicken.
